When we renovated the kitchen in my last condo we deleted the bulkheads, they were completely empty but for a few inches of vent hood ducting, which we were easily able to change so that it worked without a bulkhead. Yeah, I also removed bulkheads from my cabinets during a reno. It was a bit of a mission because I had to put in new drywall and the mudding wasn't quite perfect. Did have to change some things with the hood (which previously wasn't venting outside) but got it done.
