They have all been designed as condos, but Auburn has chosen to keep them as rentals for the time being.
The image attached should give you an idea of how many left (circle is under construction), plus townhouses on Avondale.

It is going according to the plan. It was always meant to be a 10+ years site build out.
Reminds me of that one real-estate commercial with the guy in the condo with construction in the background -- not knowing that the construction was going to last as long as it did.

Yes. It's a long-term project. Schneiders will be the same.
Auburn is, in general, building more rentals than condos. As long as the rental business is good, they may keep the buildings as rentals.

Out of curiosity, are there any renders in existence of what the final, completed Barrel Yards is supposed to look like? Maybe that were taken to council at some point for approval?

I'm not sure if there are any high quality renders around, just a few rather bad renderings generated through a CAD program.

The first page has the site map. They have the twin Onyx towers done, the twin Cooperage towers done, the Delta Hotel and now they are currently working on the two Royal Oak towers. Not sure when the Granite Hills tower will be started, or the two office towers (assuming they're even going to be built at this point).
The entire site probably won't be done for a few more years. They're taking this one slow, although Auburn Developments works like that.

Noticed when I was driving by the other day that the next building is going up nicely. Close enough to Uptown I suppose, but it would have been beast had this been a couple blocks closer to update as the density is terrific.

The original plan called for a pair of office towers on the part of the site closest to Erb/Caroline, which would really connect the development to uptown if there was some good retail on the ground floor. Given uptown isn't really a major office hub though, Shopify excepted, I wonder if they'll build them as residential instead.
It's definitely unfortunate they started with the part of the property that's a couple blocks away.

I don't think it has been cancelled. Office is fully dependent on the market at the time and securing a big tenant before construction. If they get the tenant, they will build, and if not they will not. If the market calls for much more residential when the time comes to develop that phase, then they will likely ask for another zone change to allow for more residential instead of office.
